Happy Halloween Chili

I’ve tried to start this tradition with my little family of making chili on Halloween but this year I got a little bit more creative. I added chunks of sweet potatoes and only did black beans to make it a Halloween colored chili. I know so creative right 😉 Anyways in this chili I packed in some healthy stuff like quinoa and sweet potatoes to get the littles to eat them. They all loved it and ate seconds. I will call this chili a success. You can also make it a vegan chili by omitting the meat.

2 cans tomato sauce

2 cups water

2 cans beans

1 can diced tomatoes

1 can diced green chilies

1 medium sweet potato peeled and diced

1 small onion diced

1 T real maple syrup or you can sub with brown sugar

1-2 T chili powder

1 T cumin

1 tsp oregano

1/2 tsp paprika

1/2 tsp salt

1lb ground meat (turkey works well too)(can omit for vegan option)

Add all ingredients to crock pot. Cook on low for 6 hours. Check it a few times and stir and make sure the sweet potaoes dont get over cooked or they will turn into mush! You can also taste and adjust seasonings as well as adding more water depending upon the consistency you like your chili. Happy Halloween Enjoy!
