Don’t you love when you come up with an awesome recipe when you are trying to use up food that might go bad, or food you need to get rid of? That was my case for lunch today or at least for the juice anyway. The salad I’ve made previously, but the new juice turned out delicious! The salty sweet salad and the sweet slightly bitter juice made an excellent combination! I even left some juice for my daughter when she woke up from her nap, she too loved it!
Simple Green Salad

simple green salad perfect for lunches or sides
Ingredients
- 2 cups Green Lettuce
- 3 small Cucumbers
- 2 Scallions
- Olive Oil
- Balsamic Vinegar
- Himalayan Pink Salt
Instructions
- Cut up all of your vegetables and put into a salad bowl and mix together
- drizzle olive oil and balsamic vinegar over your salad (amount depends on your preference)
- sprinkle salt over your salad and mix together

Sweet Beet Juice

- 1 medium sized beet
- 1 pear
- 1 pomegranate (seeds only)
- 1-2 cups of grapes
- 2 or more cups spinach
- 4-5 mint leaves
Instructions
- Juice all of the ingredients in your juicer
